Squash Cheesecake Bars Made From Pureed Winter Squash for Leaner–Meaner You


Squash Cheesecake Bars
Active Time:  20 Minutes
Total Time:  4 Hours
Yield:  18 bars
Make Ahead Tip: Cover and refrigerate for up to 2 days.

INGREDIENTS
9 low-fat graham crackers (4 1/2 ounces)
1/2 cup old-fashioned rolled oats (not quick-cooking or steel-cut)
2 tablespoons plus 1/2 cup sugar, divided
1/4 cup plus 3 tablespoons all-purpose flour, divided
2 tablespoons unsalted butter
3 tablespoons nonfat milk
8 ounces nonfat cream cheese, at room temperature
8 ounces reduced-fat cream cheese at room temperature
1/2 cup winter squash puree
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Tip: To make your own squash puree, halve and seed out one medium acorn or butternut squash; place, cut-side down, on a lightly greased baking sheet. Bake in a preheated 375°F oven until soft, about 50 minutes. Cool and then scrape out the flesh with a fork. Or simply use frozen (thawed) or canned squash puree. Find frozen squash puree near other vegetables in the freezer section and canned squash near the canned pumpkin.
            

DIRECTIONS
Preheat oven to 350°F. Coat a 9-by-13-inch baking pan with cooking spray

Process graham crackers, oats, 2 tablespoons sugar, 1/4 cup flour and butter in a food processor until finely ground. Add milk; pulse until completely moistened.

Transfer the graham cracker mixture to the prepared pan and evenly pat into the bottom. Bake for 10 minutes. Cool on a wire rack for 20 minutes.

Meanwhile, reduce oven temperature to 325°. Beat both cream cheeses and the remaining 1/2 cup sugar in a large bowl with an electric mixer at medium speed until creamy, scraping down the sides occasionally.

Beat in squash puree until smooth. Beat in eggs one at a time. Finally, beat in vanilla, cinnamon, salt and the remaining 3 tablespoons flour. Scrape the filling into the pan, spreading evenly over the crust.

Bake until set and the edges are light brown, about 35 minutes. Let cool completely on a wire rack, then refrigerate for at least 1 hour before cutting into bars.

Gorconzola Cheese Sauce & Dressing or the poor man's blue cheese


This recipe is so easy and it will make your guests believe you are gourmet chef-the recipe was created by the Famous Lodge Restaurant in Fortuna, California.

Ingredients
1 pint carton of large curd cottage cheese

2.1/2 cups Best food olive oil mayonnaise or just mayonnaise

4 oz Crumbled Gorgonzola Cheese: Buy Gorgonzola Cheese at Trader Joe’s or Whole Foods they have the best prices

1 cup buttermilk

1 teaspoon Garlic powder

1 teaspoon Onion powder

½ teaspoon Fresh Ground Pepper

Directions
Mix and stir ingredients together in large bowl-stir well than transfer to large glass jar with air tight lid –do not store in plastic container – Refrigerate it will last for 10 days however in our household it usually consumed in full in 3 to 5 days.

NOTE: This is so good and yummy I always get rave reviews and so will you:

Use as a Dip for Vegetables, Potato Chips’ or French fries, Chicken Nuggets, Chicken Strips, Fried Chicken, Baked Chicken,  Any Type of Fish, Salad Dressing, Sauce for Roast Beef, Hamburger, Lamb Loin or Lamb Chops, Pork Chops, Pork Loin, Potato’s Filling, Fresh Fruit.

Sauce is very thick if you decide to thin the sauce- use additional buttermilk however remember the sauce is suppose to be thick-I have been asked is this fattening the obvious answer is yes however you are not going to eat a quart of this sauce- so go ahead and enjoy and just remember if you want to lose weight all you have to do is increase your daily fiber intake.

The main indications of chronic fatigue syndrome (CFS), is overall general physical and mental fatigue, chronic pain and insomnia; (CFS) is a real disease; remember there are many different causes of tiredness and just because you frequently get tired doesn’t necessarily mean you are suffering from chronic fatigue syndrome. CFS as a condition, must persist for more than six consecutive months and include other symptoms such as memory loss, sore throat, headaches, insomnia, muscle/joint pain without swelling or redness.

Swelling and  redness would be indicative symptoms of arthritis which is an immune problem. Though there are several potential causes for CFS, the main reason for all fatigue is poor nutrition and lack of sleep. Other causes can be faulty digestion, food allergies, obesity, sleep disorder, tension, depression, smoking, alcohol and drugs are also contributing factors.
If you are suffering from chronic fatigue syndrome the main indicators are physical and mental exhaustion. CFS can be so severe that people are physically unable to participate fully in normal, everyday activities. Even getting plenty of rest and being bedridden doesn’t seem to make any difference for most sufferers. But, with basic lifestyle changes and a superfoods diet rich in whole food nutrients, almost anyone can help or even reverse these symptoms.

You can switch to a more wholesome diet that consists mainly of fresh fruits, vegetables and whole grains. Citrus fruits, berries, tomatoes, potatoes, broccoli, cauliflower, Brussels sprouts, red and green bell peppers, cabbage, and spinach are all full of vitamin C, which helps promote a healthy immune system. Zinc does the same.  Red meat, fortified cereals, peanuts and dairy products are all good food sources of zinc.

And, for protein, focus on fish high in omega-3 oils flax seeds and lean poultry, since they are loaded with essential fatty acids (EFAs) which help improve circulation and oxygen uptake with proper red blood cell flexibility and function. It’s imperative to get EFAs from your dietary choices, as the body cannot manufacture them.  EFA deficiencies are linked to diminished mental capacities and immune function. 


Other things that will help include decreasing stress and getting plenty of good quality rest and regular moderate exercise. Drink lots of pure, clean water, and avoid sweets, caffeine, sodas, processed and salty foods.  Set obtainable goals and think positively.

No matter your opinion on the legacy of Steve Jobs, we can likely all agree on this: Steve Jobs, had some unconventional diet health habits. The new biography by Walter Isaacson details some of the weirder ones, from extremely restrictive diets to questionable personal hygiene.

(A personal favorite: One of his go-to stress relievers during Apple's early days was soaking his bare feet in the company toilets.)

We asked some nutrition experts to weigh in on some of the stranger, stricter eating habits of the legendary tech tycoon.

The book details his occasional tendency to eat only one or two foods, like carrots or apples, for weeks at a time. Besides developing a sunset-like hue -- which those who worked with him are quoted as remembering -- there are other health issues that can come from adhering to such a limited diet, says Elisa Zied, registered dietitian and msnbc.com contributor.

"Although apples and carrots are healthful and provide carbohydrates, they have very little protein -- unlike fat and carbohydrates, protein can’t be stored in the body, so it’s important to consume enough protein rich foods each day," explains Zied, who's the author of the book, "Nutrition at Your Fingertips."

Protein provides the body with energy and structural support -- it also helps preserve lean muscle tissue that keeps your metabolism raring to go, and it supports muscle function. But if you don't take in enough protein, your body will miss out on essential amino acids, Zied says. "These essential amino acids are used to make body proteins ... that support growth and maintenance of body tissues."


"Without enough dietary fat, your body’s fat stores can become depleted," Zied explains.

"Your skin may suffer, you may feel more cold more often, and your organs and body tissues may be more vulnerable against injury -- especially risky for those with chronic illness."

Flirting with Fruitarianism
Jobs also spent some time as a fruitarian, a subset of veganism that means eating only fruits, nuts, seeds, vegetables and grains -- absolutely no animal products. This kind of diet does contain some very healthy foods, and many vegans manage to keep extremely healthful diets. But Zied cautions that without a careful eating plan, essential nutrients may be missing.

"This type of diet is extremely restrictive as it eliminates dairy foods ...  and probably doesn’t contain enough dietary fat unless you’re eating lots of nuts and seeds," she explains. "And because the foods you can eat (or beverages you can drink) are so limited, you only get the nutrients provided in the specific foods."

Veganism and the Tyranny of the Daily Shower
Jobs also believed that his commitment to vegan diets meant his body was flushed of mucus -- and that it meant he was free from body odor, so he didn't need to wear deodorant or shower regularly. Unsurprisingly, the book quotes former coworkers saying that he was very, very wrong.

Actually, the lack of complete proteins in vegan-style diets might impede the body's detoxification process, which "could make him smell even more," says JJ Virgin, nutrition expert and co-star of TLC's "Freaky Eaters." As for mucus -- Jobs may have had a point there. Dietary changes can help reduce the goo, especially for those who produce excessive mucus because of illness.

The Agony and the Ecstasy of Fasting
Jobs would sometimes turn to fasting to create feelings of euphoria and ecstasy. What he was most likely experiencing was something called ketosis, which develops after a period of fasting and can lead to mild euphoria.

When you're eating normally, glucose is the body's primary energy source, Zied explains. But when you're fasting, your body creates small chemicals called ketones that act as a substitute for glucose, and can be used for energy by most body cells.

"If your body makes more ketones than it needs to create energy, a dangerous condition called ketosis develops," Zied says. "This increases the loss of sodium and water from the body and can contribute to nausea, weakness, fatigue."

Healthy Diet Meatloaf Dinner
Meatloaf
 Ingredients

    1 pound ground chicken or turkey
    1 egg
    1/4 cup home made bread crumbs
    1/8 teaspoon ground black pepper
    1/2 teaspoon seasoned salt
    1/2 teaspoon onion powder
    1/2 teaspoon garlic powder
    1 teaspoon Worcestershire sauce
    1 tablespoon olive oil
    1 cup thinly sliced onion
    2 tablespoons all-purpose flour
    1 cup beef broth
    1 tablespoon cooking sherry
    1/2 teaspoon seasoned salt
    1/2 teaspoon seasoned salt
    1/2 teaspoon thyme leaves
    1/2 teaspoon basil flakes
    1/2 teaspoon ground cumin

In a large bowl, mix together the ground chicken or turkey, egg, bread crumbs, pepper, salt, onion powder, garlic powder and Worcestershire sauce. Form into 8 balls, and flatten into patties.






Heat the olive oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.

Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry.

Season with seasoned salt; Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

Cacao: Didn’t expect to see chocolate on a super food list, right? Well, buying organic chocolate (found in most health food stores) with high levels of cacao can do a body good. It may not be the tastiest thing to eat straight, but mix a bit of 100 per cent organic cacao powder into a morning smoothie or coffee, or buy chocolate bars that are at least 75 per cent cacao.

Peanut Butter: The food that kids love is, in fact, healthy for you. Nuts are packed with omega-3 fatty acids, which can help fight heart disease. Almonds, in particular, are known for lowering cholesterol.

Turkey: Thanksgiving and Christmas are long gone, but it’s always a good time to make lean, protein-rich turkey. You can cook a small breast with a side of cranberries, or substitute ground turkey in recipes that call for ground beef. Unfortunately, turkey lunch meat doesn’t make the cut, because it’s typically high in sodium.

Cinnamon: Believe it or not, this spice is considered to be one of the healthiest foods in the world. And, no, it doesn’t count if it’s glued to the top of a sticky bun! Simply dust it on your oatmeal, your morning coffee, or even on a piece of fruit.

Pomegranate juice: This antioxidant-rich juice has been shown to help fight heart disease and lower cholesterol. Drink a small cup of pomegranate juice daily, diluted with water if you find the taste too strong. You can also buy blends that contain apple or blueberry juice.

Yogurt: Smoothie lovers, take a bow! You’re ahead of the game if you’re eating non-fat yogurt, because it’s good for intestinal health. Mix the plain stuff with some of the items on this list, including nuts, cinnamon or berries and you’re doubling up on healthy ingredients.

Oats: Whole-grain goodies, such as oat bran breakfast cereal (like Cheerios), oatmeal and whole grain breads are on the list because they help lower your cholesterol and increase fiber intake.

Avocado: Go ahead and whip up some avocado salsa, a great side dish. Guacamole is also good for you. Avocados are high-calorie, so you don’t want to go crazy eating them, but they are said to improve blood flow, which increases brain activity.

Seeds: Seeds are perfectly adapted to the taste and ability of humans to pick, dry, store, and crack. No wonder study after study shows raw nuts and seeds not only lower cholesterol, but protect against common diseases of aging. I recommend almonds, Brazil nuts, cashews, pecans, pistachios, macadamias, filberts, and walnuts; and sunflower, sesame, flax, and pumpkin seeds. These delicious natural foods are high in nutrients and healthful unsaturated fats.

Flax Seeds are rich in lingams and omega-3 fatty acids, and scientific studies have confirmed that flax seeds have a positive influence on everything from cholesterol levels and constipation to cancer and heart disease.

Tea contains antioxidants. Like the Rust-Oleum paint that keeps your outdoor furniture from rusting, tea's antioxidants protect your body from the ravages of aging and the effects of pollution.

Tea has less caffeine than coffee. Coffee usually has two to three times the caffeine of tea (unless you're a fan of Morning Thunder, which combines caffeine with mate, an herb that acts like caffeine in our body). An eight-ounce cup of coffee contains around 135 mg caffeine; tea contains only 30 to 40 mg per cup. If drinking coffee gives you the jitters, causes indigestion or headaches or interferes with sleep -- switch to tea.

Tea may reduce your risk of heart attack and stroke. Unwanted blood clots formed from cholesterol and blood platelets cause heart attack and stroke.

While the overall research is inconclusive, there are enough studies that show the potential protective effects of drinking tea to make adding tea to your list of daily beverages.

Tea helps keep you hydrated. Caffeinated beverages, including tea, used to be on the list of beverages that didn't contribute to our daily fluid needs. Since caffeine is a diuretic and makes us pee more, the thought was that caffeinated beverages couldn't contribute to our overall fluid requirement.

The only time the caffeine becomes a problem as far as fluid is concerned is when you drink more than five or six cups of a caffeinated beverage at one time.
